I am usually dissatisfied with the price and quality of shop bought vegan mayonnaise. Especially when the home made version is far superior… and cheap and easy to make.

They key to this recipe is the right equipment. I used a food processor with an emulsifying disk. Blenders and hand blenders may also be used as long as they don’t add too much air.

Instructions
  1. Combine soy milk, oil, salt and mustard in your food processor/blender.
  2. Emulsify in the food processor until the mix turns white and firm.
  3. While blending gently drizzle the lemon juice into the blender.
  4. Taste and adjust seasoning according to your taste.
  5. Use a jam funnel to get the mayonnaise into a suitable sized jar.
