This is a very satisfying savoury meal, I enjoyed eating mine with sauerkraut and pumpkin seed sauce. This is very similar to macaroni cheese, except it contains no cheese and no macaroni, in fact I used gluten free pasta.

  1. Clean and trim the leeks. Slice lengthways and place on a baking tray.
  2. Spray the leeks with a little olive oil and roast at 180C for 20mins.
  3. Allow to cool. Slice the leeks and place into the bottom of a baking dish.
  4. Prepare pasta according to manufacturers instructions. Rinse the pasta in cold water. Add to the baking dish.
  5. Place the sauce ingredients into a blender and blend into a smooth homogenised sauce.
  6. Add the sauce to the baking dish, and mix the ingredients well.
  7. Bake the dish at 180C for 20mins.
