Instructions
  1. Remove the loose outer leaves of the cabbage, then wash.
  2. Quarter each cabbages, and remove the stalk.
  3. Shred the cabbage, I used the 3mm setting on my food processor.
  4. Put shredded cabbage in a bowl, and cover with the salt, cover with a tea towel and leave for 24 hours.
  5. Drain the cabbage in a colander.
  6. Boil the vinegar with the peppercorns and ginger. Leave to cool.
  7. Put the cabbage in jars, and pour over the vinegar.
  8. Wait at least a week, preferably two weeks. Now your pickled Cabbage is ready to be eaten.
