They say the first taste is with the eye and this beautifully presented dessert is bound to get your friends’ and family’s tastebuds tingling. April is here at last and this recipe reminds us of spring walks through urban parks staring up at the birds singing in the blossoming trees… placing your feet without a care in the world…

  1. Place the walnuts, into a food processor with cutting blade.
  2. Process until the pieces are tiny.
  3. Now add the dates, and cocoa powder.
  4. Process until the pieces are tiny.
  5. Add the marmalade, continue to process until it is all mixed in.
  6. Warm the coconut oil in a microwave for 90 seconds, or until liquid.
  7. Restart the processor and drizzle in the oil.
  8. Place the mix into a bowl, compress out any air.
  9. Refrigerate for 4 hours, or overnight until the mixture stiffens.
  10. Mould the mixture into bitesize ball shapes. Or whatever shape you fancy!
  11. Put coconut in a bowl.
  12. Coat the balls with desiccated coconut. Roll them well in your hand to ensure the coconut adheres.
