Beetroot and Kidney Bean Burger Bites

These tasty burger bites are delicious as part of a main meal or eaten in a bun or wrap. I enjoyed mine in a wrap with lettuce, avocado and tahini sauce. They can be enjoyed hot or cold.

Kidney beans are rich in various minerals, vitamins, fibers, antioxidants, and other unique plant compounds and a great plant-based source of protein. They are said to be useful for promoting colon health and moderating blood sugar levels. Kidney beans should always be eaten well cooked. Raw or improperly cooked beans are toxic.

Beetroots get their colour from a pigment called betacyanin, a powerful antioxidant. It is said that the betacyanin in beetroots can assist liver function and be effective at preventing some types of cancer and heart disease. They are also very high in folic acid.

Instructions
  1. Place all ingredients into a food processor
  2. Process until completely minced.
  3. Form into small patties and fry in an oiled pan on a medium heat for 10 minutes, turning occasionally.
